CHARACTERISTICS
DESCRIPTION: Red with a great structure, intense and elegant, passed over the pomace of the amarone. It offers an enveloping bouquet of cherries and red fruits in alcohol. Soft pressing with destemming. Fermentation for 10 days at a temperature from 23 to 27 °, until complete extraction of color and aromas in the free-run must only without pressing. The Valpolicella thus obtained at the end of winter is passed over, that is, it is re-fermented on the Amarone marc. In this way the wine takes on greater body and intensity when tasting. Aging 6 months in large wooden barrels, 2 months in the bottle.
TASTING NOTES: very intense red color with slightly purple hues, the nose bursts with black cherry in alcohol and dried plum, flavor denotes structure and persistence, harmony and softness.
PAIRING: excellent complement to any dish based on red meat, poultry, game or cheese.
SERVING TEMPERATURE: 14 ° / 16 ° C.
