DESCRIPTION: the vineyards are located in the five municipalities of the Valpolicella Classica: Sant’Ambrogio, San Pietro in Cariano, Fumane, Marano and Negrar. Maceration and fermentation in contact with the skins for 12 days with fermentation at a controlled temperature (25 °). After a few months (usually in January), the ripasso operation is carried out: the wine is kept in contact with the pomace, still full of sugars and aromas of the dried grapes used for the production of Amarone, thus acquiring greater structure and complexity. Refine in large Slavonian oak barrels. Further passage in the bottle before release.
TASTING NOTES: the nose has intense fruity memories of cherry, blackberry and blueberry, to which are added notes of spices. Well structured, dry and with slight traces of black cherry jam.
PAIRING: Risotto with asparagus, mushrooms or pumpkin. Vegetarian or meat lasagna, pasta with vegetables, grilled meats and aged cheeses.
SERVING TEMPERATURE: 18 ° / 20 ° C. To be uncorked one hour before tasting.
